A good friend of mine mentioned that she throws these four things in her crock pot and her family just loves it. Well, I was sold... 4 ingredients... crock pot... easy! I tried it, we loved it. And the best part is - it's versatile. Low-carb? No problem. You can serve it over greens for a salad. Lots of leftovers? Throw it on a slice of Ezekiel bread for a yummy sandwich. I love to pair ours with a sweet potato.
- 2-3 raw, large chicken breasts (just under 1 pound)
- 1 medium pear (cored and sliced thin)
- ¼ pound Portobello mushrooms (sliced or chopped)
- ¼ cup balsamic vinegar
Place all ingredients in slow cooker and cook on low for 4-6 hours, or until the chicken falls apart when stirred.
