Crock Pot Recipe: Chicken, Portobello & Pear - This recipe is perfect for the busy or working mom who doesn't have a ton of time! It's quick, easy, and tasty - and only requires 4 ingredients!!

You know me - if it's not quick, easy, and simple, I won't cook it! #whosgottimeforthat?! A good friend of mine mentioned that she throws these four things in her crock pot and her family just loves it. Well, I was sold... 4 ingredients... crock pot... easy! I tried it, we loved it. And the best part is - it's versatile. Low-carb? No problem. You can serve it over greens for a salad. Lots of leftovers? Throw it on a slice of Ezekiel bread for a yummy sandwich. I love to pair ours with a sweet potato.

Ingredients:

  • 2-3 raw, large chicken breasts (just under 1 pound)
  • 1 medium pear (cored and sliced thin)
  • ¼ pound Portobello mushrooms (sliced or chopped)
  • ¼ cup balsamic vinegar

Directions:

Place all ingredients in slow cooker and cook on low for 4-6 hours, or until the chicken falls apart when stirred.

Southwestern Slow Cooker Chicken

This Southwestern Slow Cooker Chicken Recipes is perfect for the busy mom... six ingredients and little-to-no prep time. It's a huge hit with the whole fam!

Cooler weather means more crock pot meals for this busy mama!! This delicious Southwestern Slow Cooker Chicken recipe fulfills my need for a Tex-Mex flavored dish while allowing me to eat clean! And the best part is - it's super-easy to make, which is one of my top 3 requirements for any meal. It can even be tossed in the crock pot in the morning and it'll be ready for you when you get home from work in the evening!

Yields: 5 servings (servings are 2 cups each)

Ingredients: 

  • 4 raw, boneless, skinless chicken breasts
  • 1 1/3 cup home cooked pinto beans (or 15 oz can rinsed and drained)
  • 1 1/3 cup home cooked black beans (or 15 oz can rinsed and drained)
  • 3.5 cups diced fresh tomatoes (or 28 oz can of low sodium diced tomatoes)
  • 16 oz organic corn (frozen or canned)
  • 1 (12 ounce) jar of your favorite salsa (no sugar added)

Directions:

1. Place all ingredients in the slow cooker in the order listed above.

2. Cook on low for approximately 6 hours, or until the chicken falls apart when stirred with a fork
