Gluten Free Blueberry Muffin Recipe

I remember the day I knew that I was going to begin making healthy eating a priority. I was three months pregnant with my now-toddler, and we were sitting at a Christmas party.

My husband and I were talking with a few other couples about being healthy, and we mentioned how healthy we had been eating … we recently switched to Honey Nut Cheerios and orange juice for breakfast.

They laughed.

How to Keep Your Family Healthy This Year

Did you set goals for your health this year? What about your family's health? These are my top tips for keeping my family healthy this year!

Did you set goals this year? One of my goals this year revolved around health. But not just my health - the health of my family! This can be a challenge with as busy as we all three tend to be {yes, even our baby girl is a busy and social butterfly!}, so here are some tips I am implementing to help keep us germ free and ready to make this year one of our best years ever!

Washing Our Hands

It seems like common sense, but we’ll be washing our hands multiple times a day {especially when we head home from church, school, the grocery store, restaurants, or playdates}. Our baby girl loves washing her hands {she even has a song that she sings when she washes them} and we make her feel SO grown up when she does. We also make sure and avoid soaps that contain triclosin {it's been linked to some yucky stuff}, sticking to brands like Method* and The Honest Company*.

Limiting Processed Sugars

We try not to keep sugary treats or cookies in the house… instead, our pantry and fridge are loaded up with fresh fruits, veggies, nuts, and other whole foods for snacks. On birthdays or holidays, we may make a batch of cookies or have a cupcake {Bliss Cupcakes are our current favorites}, but these really are treats reserved for special occasions.

Filling Up On Nutrients

One of my priorities this winter {and throughout the year} will be making sure that we are counting nutrients rather than calories. I'm working hard to eat as many whole and unprocessed foods as possible. One way that our family makes sure to get plenty of nutrients is by drinking our Shakeology* shakes at least once per day. Everyone in our family loves the shakes, and I can be confident that we are getting plenty of fruits, vegetables, and dense nutrition as part of this meal.

Getting Plenty of Rest

I read an article not too long ago that said being deprived of just one or two hours of sleep over the course of a week can leave you feeling as if you haven’t slept at all! I don’t know about you, but I need my eight hours a night. It helps me be a better mom, a better wife, and a better friend! One of my action items for this year is to make sure that we stick with a reasonable bedtime so that we can be well-rested, refreshed, and ready to start our day!

Spinach & Strawberry Salad

This Strawberry & Spinach Salad is a quick and delicious family favorite. My husband actually requests it!

I spent so much of my early adult life eating salads, that for a long time, I couldn't stomach the thought of eating one. But now, I'm back on the salad train. And this spinach & strawberry salad was the catalyst! {Bonus: my husband actually craves it. He asks for it at least a few nights a week.} The recipe is easy to make, requires only a few ingredients, and tastes great.

Yields: 1 serving

Ingredients:

  • 1 ½-2 cups spinach, washed
  • 2-3 strawberries, sliced
  • 1 Tbsp Feta Cheese
  • 8-12 Walnuts, (I cut these in halves or fourths) (For a less healthy option, my husband likes candied walnuts or praline pecans)
  • 1-2 Tbsp Raspberry Vinaigrette or Balsamic Vinegar Dressing

Directions: Combine all ingredients in bowl, drizzle dressing on top, and serve.

Note: I used to make this salad with cherry tomatoes rather than strawberries, but we love the sweetness of the strawberries. Feel free to substitute your favorite fruit or veggie!

Update: Our new favorite fruit to add is blueberries {so maybe I need to change the name from spinach & strawberry to spinach & blueberry}... yum!

Crock Pot Recipe: Chicken, Portobello & Pear - This recipe is perfect for the busy or working mom who doesn't have a ton of time! It's quick, easy, and tasty - and only requires 4 ingredients!!

You know me - if it's not quick, easy, and simple, I won't cook it! #whosgottimeforthat?! A good friend of mine mentioned that she throws these four things in her crock pot and her family just loves it. Well, I was sold... 4 ingredients... crock pot... easy! I tried it, we loved it. And the best part is - it's versatile. Low-carb? No problem. You can serve it over greens for a salad. Lots of leftovers? Throw it on a slice of Ezekiel bread for a yummy sandwich. I love to pair ours with a sweet potato.

Ingredients:

  • 2-3 raw, large chicken breasts (just under 1 pound)
  • 1 medium pear (cored and sliced thin)
  • ¼ pound Portobello mushrooms (sliced or chopped)
  • ¼ cup balsamic vinegar

Directions:

Place all ingredients in slow cooker and cook on low for 4-6 hours, or until the chicken falls apart when stirred.

Balsamic Chicken Pasta

Balsamic Chicken Pasta - This easy recipe is perfect for busy moms and picky toddlers!!

Are you as obsessed with warm and hearty meals as I am this winter? Ok, let's be real - all I want to do is curl up with a big vat of coffee, a warm blanket, and hibernate while watching Elf on replay! Add this Balsamic Chicken Pasta to my bowl and I'll be happy as can be. Seriously, though - you already know my 3 requirements for any meal, and this one is easy as can be! It is super-filling (we couldn’t finish our bowls) and doesn't take much time at all.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • ¾ package whole wheat penne pasta
  • 1 package (8 oz) fresh sliced mushrooms
  • 1 package (8 oz) fresh cherry or grape tomatoes
  • Feta or parmesan cheese
  • Cavender’s Greek seasoning
  • ¼ bottle Balsamic Vinaigrette Dressing
  • 1 package frozen vegetables (broccoli & cauliflower mix or your favorite)

Directions:

(Note: I perform the first three steps at the exact same time using three different pans, which takes about 10-15 minutes total)

1. Cut chicken breasts into 1" squares and cook on medium heat in a large skil­let. Sea­son lightly with Cavender’s Greek sea­son­ing.

2. Combine mush­rooms, toma­toes, a light coating of vinaigrette dress­ing (I use about ¼ of the bottle) in a large skil­let. Season lightly with Cavender’s Greek seasoning. Cook on low to medium heat until veg­gies are ten­der.

3. Cook pasta to pack­age direc­tions.

4. Cook steamed vegetables according to package directions and sprinkle lightly with Cavender’s Greek Seasoning.

5. Divide pasta, chicken, and tomato/mushroom mix among four bowls. Sprinkle feta or parmesan cheese on each bowl. Serve with a side of steamed vegetables and/or fruit. Note: The last time I made this, we forgot about the cheese last night and the recipe was great without it.
