If you've been reading my blog for any amount of time now, you know that when it comes to baking, I need something that's quick, simple, and difficult to burn. And you also know about my obsession with all things PUMPKIN {including my healthier version of the pumpkin spice latte}.

So let's be real with eachother... in just a few weeks, you and I are both going to be casually sauntering past the dessert table before dinner, picking out our perfect piece of pie. Yes, even trainers eat pumpkin pie on Thanksgiving!! {And P.S. This is where I need to confess a deep dark secret... I think that nuts belong anywhere and everywhere except dessert. So I'll be silently praying that you choose the pecan pie and leave an extra slice of pumpkin for me!}

That's why today, I'm so thrilled to be able to share my Healthy Pumpkin Pie Recipe! {Have you heard about the expected pumpkin shortage this year? You'd better stock up now on the prepared pumpkin... I'm not kidding - see for yourself!}

Since I don't bake well, I've tried and tweaked several recipes to finally arrive at this one that I know you'll absolutely love. Yes - you can have your pumpkin pie... eat it... and forget the guilt! Most importantly... this healthy pumpkin pie recipe contains no artificial ingredients!!

Ingredients: 2 cups prepared pumpkin 1 1/2 cups nonfat milk (you can substitute unsweetened soy, almond or rice milk) 1/2 cup honey 4 egg whites 2 1/4 teaspoons pumpkin spice seasoning (I love Trader Joe’s* version)

Directions: 1. Combine all of the ingredients into a large mixing bowl and mix thoroughly. 2. Pour the mixture into your pie crust (I used a clean, pre-made graham cracker crust, but you could make your own!) 3. Bake at 425 degrees (F) for 15 minutes. Then reduce oven temperature to 350 degrees (F) and bake for 45 minutes. (Total cooking time: 1 hour)
